Italian Summer Squash
Serves: 4
Ingredients
1 medium zucchini
1 medium yellow squash
2 TBSP Viva La Olive Tuscan Herb Olive Oil
1 medium yellow squash

2 cloves garlic, minced (measure with your heart)
Salt, pepper, and Italian seasoning to taste

Directions
- Cut zucchini and squash lengthwise and scoop out seeds, then cut into thick half moons. Warm skillet on medium high heat and add Viva La Olive Tuscan Herb olive oil.
- Add the zucchini and squash to skillet in an even layer. Cook for 2 minutes, or until some pieces get golden brown. Gently mix. Repeat for an additional 2 minutes. Season with salt, pepper, and Italian seasoning to taste.
- Reduce heat to medium and add minced garlic and sauté for another minute, or until zucchini is crisp-tender.*Recipe and Photo Credit Kaitlyn B. *
