Blue Cheese Stuffed Olives Bean Salad

Ingredients
1 Large Cucumber
1 Large Red Onion
1 Jar Blue Cheese Stuffed Olives
4 TBS Herbs de Provence Olive Oil (more or less to taste)
3 TBS Italian Herbs of Naples Dark Balsamic (more or less to taste)
Salt and Pepper
Directions
- After your bean prep...(I do this the day before) chop the cucumber and onion, then just toss all ingredients together and chill.. This high protein salad is delightful and keeps for days!! Ps. You can substitute any Olive Oil or Balsamic depending on your tastes! I love a spicy kick so Peperoncino Garlic Olive Oil and Jalapeno Lime Balsamic are my top picks!
