Bourbon Maple Roasted Vegetables

6-8 servings

Ingredients

12oz Brussels sprouts, halved
1 medium honey crisp apple
1 medium sweet potato
2 large carrots, peeled
3 strips of uncooked bacon, sliced
2 Tbsp Viva La Olive Bourbon Maple Dark Balsamic Vinegar
2 Tbsp Viva La Olive Sweet Butter Olive Oil
2 small sprigs of fresh rosemary & thyme, chopped
Salt and pepper to taste

Directions

  1. Chop vegetables/apple into uniform sizes. Put vegetable mixture and bacon onto a baking sheet. Toss in Viva La Olive oil and vinegar. Sprinkle with rosemary, thyme, salt, and pepper.
  2. Roast in 425° oven for 30 minutes, or until fork tender. Stir every 10 minutes to prevent burning. Serve and enjoy as the perfect fall or holiday side!
