Directions
- Here's how: Cut your foil squares according to size of beets. Trim beet ends and cover them in olive oil.. place them in 400 degree oven for 30- 45 minutes (may need more time according to size) While you're letting them cool, heat a splash of olive oil in a large skillet over medium heat. Add the garlic and chopped beet greens then cook, stirring, for 1 minute. Season with salt and pepper, and sauté, tossing, until wilted. Let cool. Lay beets, peaches, and crumbled cheese on top!
