Pineapple Jalapeno Shrimp

1 pound medium shrimp, peeled and deveined
6 tablespoons Jalapeno Olive Oil
3 tablespoons Pineapple Balsamic Vinegar
1 medium onion
1 green pepper
1 jalapeno (if you're into it 🔥 )

3 cloves fresh garlic, peeled and minced
Salt and Pepper to taste
3 tablespoons fresh flat leaf parsley, stems removed, chopped

Directions
- In large skillet, heat Jalapeno Olive Oil over medium heat. Add garlic, onion, pineapple, and jalapeno. Sauté for about 3 minutes. Increase heat to high- add shrimp and Pineapple Balsamic Vinegar. Saute until shrimp turns pink, about 2-3 minutes. Season with salt and pepper. If desired, garnish with lemon and parsley. Serve over rice. Serve immediately.
